Edamame
Dinner tonight was No-queso Quesadillas, steamed swiss chard, and microwaved edamame. Edamame is green soybeans. I bought them frozen, $3 for 12 oz non-GMO beans in their pods, microwaved them on my “frozen vegetable” sensor setting, and sprinkled them with kosher salt (you can use other seasonings, of course).
You don’t eat the pod. I am not sure how refined people eat them; perhaps they pop out the beans with their fingers. We put the pod in our mouths and pull them out again with our teeth mostly closed so that the beans pop out.
Easy to make, fun to eat, tasty, and so healthy: nutritiondata.com tells us, “This food is very low in Sodium. It is also a good source of Dietary Fiber, Protein, Thiamin, Iron, Magnesium, Phosphorus and Copper, and a very good source of Vitamin K, Folate and Manganese.”
