98 Degrees

With the temp at 98 degrees, 90% humidity, and no A/C, I decided to minimize the cooking.

I boiled some corn on the cob and let it cool a while before serving.  I also made Chickpea Salad with chickpeas from the freezer (see beans).  Frozen worked fine, didn’t taste grainy even starring in a salad – to defrost it without heating it up I microwaved until I could crumble them icily into a bowl, then rinsed them in cold water and they were perfect.   Lastly I made  a garden salad with lettuce, cuke, lovely juicy summer farm stand tomato, red pepper, cold microwaved tofu, and from my garden: purslane, mesclun greens, basil, lime basil, cilantro, chives, parsley, and spearmint.  Dressing was Green Goddess.

We ate at the porch table in our wet bathing suits.

    Excellent idea! Here in Arizona I’ve been employing similar tactics, such as cooking in the slow cooker instead of the oven, even using the slow cooker outside on the patio instead of indoors.
