Cocoa Cake
This is my own invention. It is very popular, making a not-too-sweet cake that is crispy on the outside. Most people pick it up and eat it like a brownie. It’s a great everyday dessert, or a second dessert if you’re trying to impress, because it comes together in a snap and doesn’t make too much.
- 1 c flour
- 1/2 c sugar
- 1/4 c cocoa powder
- 3/4 t baking soda
- 1/4 t salt
- 1 c water
- 1/4 c oil
- 1/2 t vanilla
In a medium bowl, mix the dry stuff with a whisk. Whisk in the wet stuff and blend well.
Pour into an oiled pan, 8″ square or 8″ round.
Bake 350 for 25-30 min.
When completely cool, and just before serving, sprinkle liberally with powdered sugar.
One time I used a paper cutout as a stencil to make the powdered sugar in a heart pattern. Then I glued some red construction paper onto a skewer to make an arrow flying into the cake. You could use this idea for all sorts of holidays or occasions.

Cocoa Cupcakes
You can also make this into cupcakes, about 10. Bake at 350 for 20 minutes.
