Vanilla Frosting

Vanilla Cake with Vanilla Frosting
This is from How it All Vegan, by Kramer and Barnard.
- 3/4 c vegan margarine
- 2 c powdered sugar
Cream that until light and fluffy. That means high speed for several minutes. Add:
Variations:
- Peppermint: 1/4 t each vanilla and peppermint extracts + red food coloring
- Maple: 1/2 t maple extract, no vanilla or soymilk
How much to make:
- 1 recipe frosts a two layer cake.
- 1-1/2 recipe frosted a 9″ 3-layer cake.
- 1 recipe frosted just the tops of an 8″ 3-layer cake.
- 1/3 recipe is plenty for 12 cupcakes.
