BBQ Sauce
This is from Veganomicon by Moskowitz and Romero.
- 1 T oil
- 1 med onion, chopped very finely
- 4 cloves garlic, minced
- 1/4 t salt
- 1 t red pepper flakes
- 1 28-oz can crushed tomatoes
- 1/3 c molasses
- 1/3 c vinegar
- 2 T sugar
- 1 T prepared mustard
- 2 t liquid smoke
Saute the onion in the oil on med heat 7 min. Add garlic and saute 1 min. Add all ingredients except last two and cook 30 – 60 min (more is better, and I actually cooked it over 90 min). Lower the heat if it’s splattering messily. Add the mustard and liquid smoke, adjust seasonings to taste. Cook 5 more min. Puree if you want.
