No-queso Quesadilla

This is from Colleen. It’s so easy and so good. My whole family likes it, which is astonishing. It takes me 8 minutes from start to finish to make one for myself for lunch, including cleanup.
Spread a soft tortilla ( I use partial whole wheat) with hummus. I put this on a dry non-stick griddle over medium heat while I gather the veggies, since my heavy frypan takes a while to heat up. You’ll figure it out for your own cookware.
Put your choice of fillings on one half of the tortilla. Don’t make it too thick. Here are some ideas:
- avocado slices
- guacamole
- diced mushroom
- zucchini
- salsa
- black beans or bean dip
- spinach leaves
- tomatoes
- diced peppers
- quartered artichoke hearts?

No-queso Quesadilla
Fold the empty half over on top of the veggies. When it’s lightly brown on the bottom, flip it over. Brown it on that side and then serve.
The first one takes a little longer. I have made these for a crowd, letting people come in and pick out what they want on it, and they cook quite quickly on the heated up pan. My kids and husband like them with just hummus.
