Seitan

BBQ Seitan
This recipe shows you how to make your own seitan out of gluten flour. It’s adapted from The Accidental Vegan by Gartenstein.
- 3 qts. water
- chunk of ginger
- 1/2 c soy sauce
- 1 c vital wheat gluten (a little less than a whole box of Hodgson Mills – go ahead and use the whole box)
Bring the water, ginger, and soy sauce to a boil in a very large pot.
In a medium bowl, mix the gluten with about 1-1/2 c warm water, with your hand until it becomes a blob. Run cold water over it and knead it under water a few minutes, changing the water when it becomes cloudy. Don’t worry if the blob falls apart; just drain it through a strainer and the blob will come together again.
Cut the blob to desired sizes (they will double in size as they cook) and drop into boiling water. Cook 1-1/2 hrs.
Then you usually use them in another recipe.
