I soaked a bunch of chickpeas last night and boiled them at breakfasttime.  For lunch I made Hummus, and with it I made a No-queso Quesadilla, with mushrooms, mustard greens, and salsa.



Appetizers were leftover Tempeh Sushi, and dinner was Pizza.  My side had steamed mustard greens, corn, baby bello mushrooms, olives, Gimme Lean “sausage,” jalapenos, and Cashew Parmesan.
