Stir-Fried Rice

Lunch today was inspired from leftover takeout rice and lots of veggies in my fridge.  I just made up a stir-fried rice with peanut oil, minced ginger, broccoli, bok-choy, cooked brown rice, red pepper flakes, and soy sauce.  I also added some raw cashews, which was kind of a mistake – they just got sort of soft.  I don’t know that this was the best stir-fry ever, but it was pretty good.

My parents came for dinner and I made Spicy Pinto Beans, Brown Rice, Corn Sticks, and King Cabbage.
