Maple Bread, Take 2

Yesterday I tried again to make a Maple Bread like Monks’ Maple Cinnamon.  I upped the white flour to 1-1/2 c and the maple extract to 2 t, added 2 T sugar and 1/2 t cinnamon.  It was still a little too wet and sank a little in the center – so more flour next time.  My kids liked this loaf better, but my son said to be like Monks it needed more of everything – he said the Monks is really cinnamony and sweet and smells really mapley.  Hmm.

Friday’s pizza had Arrabiata Sauce, onion, frozen banana peppers, and olives, and leftover plain microwaved tofu.  That last was an experiment, I just wanted to use it up, but it was good.

Today we ordered out Indian and I got Veggie Appetizers – no paneer (cheese), a vegan flatbread – sort of like naan but naan is usually not vegan, and Jeera Aloo – potatoes cooked with spices, garlic, ginger and cumin seeds.  Good!  And Reisling to go with it.

Dessert was Brownies of My Dreams.
