New Year’s Day

I made a few things to contribute to a special dinner tonight: Black-Eyed Peas and Collard Greens and Corn Cake.  I made a double recipe of the Corn Cake and baked it in almost the same size pan (9 x 9 square glass), so it was quite thick, and very popular as usual.  These are traditional New Year’s dishes.

My brother-in-law made some great vegetable dishes: carrots cut into 1-2″ pieces, boiled 10 minutes, and then sauted in (vegan, thanks!) margarine with a hint of dill; and potatoes 1″ diced with skins, boiled underdone and then roasted in the oven with olive oil and rosemary until browned.  Very good.  And my husband’s grandmother made another very nice salad.

As a special birthday request, I made a double recipe of Cocoa Cake and baked it in one 9″ pan.  That worked OK, and it was pretty good I think.
