Chocolate-Covered Strawberries

Collard Greens, Corn Sticks, Southwestern Black Beans, and Brown Rice

Dinner tonight was Southwestern Black Beans, brown rice, microwaved frozen collard greens, and Corn Sticks.  I made the Corn Sticks with 1-1/2 t Ener-G Egg Replacer instead of ground flax seed because we suspect the flax seed is giving my mom trouble.  It was a little different, but certainly good enough.

Cocoa Cake with Chocolate-Covered Strawberries

Dessert, oh boy!  I made a Cocoa Cake, then heated up the leftover Chocolate Glaze I had frozen and dipped strawberries.  It was so easy, and they tasted perfect.

A half recipe of glaze would be plenty for a pound of strawberries.  Heat it up carefully on low in a small saucepan, then take it off the heat and tip the pan with one hand to make it deeper and dip the strawberries with the other.  Put the strawberries on wax paper on a tray (I used my Tupperware pie taker) and refrigerate.
