Lemon-Poppy Muffins

Lemon Poppyseed Muffins

I made Lemon Poppyseed Muffins for breakfast; I thought they were very good, but they aren’t exactly like the ones from a grocery-store, probably due to the whole wheat flour.  I could have used the actual Lemon-Poppyseed Muffins recipe I have posted, but I really like this all-purpose recipe and would prefer to just get versatile with it.

Dinner was Lasagna Rollups with Cashew Parmesan, whole wheat penne Marinara, Focaccia with olive oil and Dipping Spices, steamed Swiss chard with balsamic vinegar, and salad with Green Goddess Dressing.

I was struck, as we were eating, with the variety of tastes, and how delicious everything was, and marveled that anyone could think that a vegan diet was ascetic, restrictive, self-denying.  This is suffering?  It’s wonderful!

Amaretto Coconut Bundt Cake

Dessert was Amaretto-Coconut Bundt Cake.  This cake is the best.
