Pinto Beans, Cumin Rice, Corn Sticks, and Broccoli

I used a can of pinto beans to make burrito filling tonight.  I fried some onion in a medium saucepan on medium heat for a few minutes, stirring occasionally.  I added garlic and some frozen green pepper and cooked another few minutes.  If the pepper hadn’t been frozen I would have turned it down to low.  I added the beans, a little cider vinegar, 1/4 t chipotle pepper powder, 1/2 t cumin, and some salt.

I reheated some leftover Cumin Rice, toasted some leftover Corn Sticks, and microwaved some broccoli.

I served this with tortillas and salsa to make DIY burritos.
