Chickpea Cutlet Sandwich

For lunch today I made a sandwich from a leftover reheated Chickpea Cutlet, with lettuce and BBQ Sauce.  That was pretty good.

Salad, Beany Burger, Spuds

Dinner was Beany Burgers made with the rest of the chickpeas and the leftover Toasted Celli Rice.  Chickpeas do not mash as smooth and creamy as pinto beans, so I think I prefer the real recipe, but this was OK.  Had them on buns with lettuce and BBQ Sauce.  We also had salad with Maple-Mustard Dressing and Rosemary pan-fried potatoes.

Dessert was leftover Amaretto-Coconut Bundt Cake.
