Collard Green Pasta Toss

For dinner tonight I mad another recipe from Toni Fiore’s Totally Vegetarian podcast: Collard Green Pasta Toss.  When the pasta was done, I tossed it with olive oil and salt and pepper to taste before dumping it in with the vegetables.  Sometimes Toni’s dishes rely heavily on the flavor of the vegetables, and my little audience of seven doesn’t always appreciate the subtlety.   It was very popular, and good cold, too.

Tossed Salad

I also steamed some green beans and made a tossed salad with lettuce, vidalia onions, red peppers, portobello mushrooms, shredded carrot, and fresh herbs: cilantro, chives, parsley, and wood sorrel.  Choices of dressing were Mustard Vinaigrette, Spicy Tomato Basil, or a bottle my Dad bought, Horseradish French.
