We’ll be closing up my parents’ cottage soon, so as the cupboard empties, meals get a bit stranger.
Dinner tonight was Garlic and Greens Soup, only with a few leftover white beans instead of potatoes. This soup is always very popular.
With it we had Chickpea Salad, with so many substitutions it bore little resemblance but was very good: just chickpeas and a chopped red pepper, and I drizzled on it: a little corn oil, balsamic vinegar, fresh chives and basil, and salt and pepper.
Dessert was leftover Birthday Cake.
