Zucchini Pizza

I made Zucchini Pizza with the last of my garden zucchini for dinner.  I was using an enormous overgrown zucchini, which kept for well over a month as I used a couple inches a week, just sealing the cut end with plastic.  This would be terrible eaten straight, but works fine in baked goods.  As I approached the blossom end, it got very spongy and seedy, but seemed to make no difference – the pizza was fine and we didn’t notice the seeds in the crust.

Today I topped it with homemade tomato sauce, portobello mushroom, eggplant (some places bread and fry it which is good but I’m too lazy), microwaved Swiss chard, olives, artichoke hearts, and 3 slices of jalapeno, minced (which ended up being almost too much – those jalapenos I got at the farm market are lethal!)
