Pasta Dinner

I helped put together a pasta dinner tonight.  Just whole wheat penne with a tomato sauce I whipped up: heat 2 cloves minced garlic in olive oil in a small pan on low heat, add one 28-oz can crushed tomatoes, probably 1/3 c nice red wine, several teaspoons Italian seasoning, and salt and pepper to taste.  Instead of Italian Seasoning, use oregano, basil, rosemary, thyme, just one or all.  Oregano is nice because its astringency, if that’s the word, seems to counteract the sweetness of the tomatoes well.   You could use diced tomatoes and either run them through the blender or leave them if you like chunky sauce.  Let simmer 20 min.  Drain cooked pasta, toss in some of the sauce, and let sit in the hot pan until the rest of the meal is done.  Freezes well.

We also had a loaf of ciabatta bread my mother-in-law picked up, leftover squash, a nice salad, and a terrific red zinfandel.

It was all so good.
