Ginger-Lime Edamame

Curry, Rice, and Chard

For dinner I defrosted leftover Curry and cooked brown rice and steamed Swiss chard.

Ginger Lime Edamame

I also microwaved some edamame and remembering how much my friends and I enjoyed something called Ginger Lime Edamame at The Owl House restaurant, I decided to give it a try at home.  I just mixed 1 T fresh lime juice with about 1 t grated fresh ginger, and dumped that over the cooked edamame before sprinkling on the kosher salt.  It was delicious.  My kids liked it because it reminded them of the Hint of Lime Tostitos (which we vegans can no longer eat).
