Shepherd's Pie

My parents came for dinner and I made Shepherd’s Pie, Herbed Biscuits, King Cabbage, and Pacific Low-Sodium Creamy Butternut Squash Soup.

Butternut Soup and Herbed Biscuits

Dessert was Cocoa Cake and Decaf English Breakfast tea.

    Shepherd’s Pie!!! I love these, and they’re perfect for the cold weather. I have done versions with no recipe, just substituting herbed mashed black beans diluted with rice milk for the gravy. Shepherd’s Pie is one of the rare things that I do enjoy sprinkling some cheese substitute on. The baked crusty potato top is even better with a bit of Follow Your Heart or Daiya. I used to do these with TVP but now use mushroom and lentils most of the time. No cholesterol, and I wonder what the fat and calories are compared to the ones we used to get for lunch down at the pub? 🙂
