Peas and Collard Greens

Peas and Collard Greens

Dinner was Black-eyed Peas and Collard Greens.  I ran out of black-eyed peas and had to partially substitute cow peas; that worked fine.

Corn Sticks

We also had Corn Sticks and Spinach Salad with orange slices, raw shredded beet, and Orange Balsamic Vinaigrette.

Spinach Salad

I tried a sweeter balsamic, the sweetest one at the grocery store, but it wasn’t anywhere near as syrupy as the stuff my brother had.
