Makeshift Bento Lunch

This is a typical lunch for my daughter.  Here she has Silk soy yogurt with frozen strawberries, fresh pineapple, an Apple-Cinnamon Muffin, and for snack a banana.  I call it makeshift because it is just little containers stuffed in a regular insulated lunch bag with an icepack.  Those bento boxes look cute but I don’t think I could work out fitting everything in every day.  Like a banana?  An ice pack?

Tuscan Kale

My son has the same dull thing every day, year in and year out: peanut butter sandwich with celery sticks and peanut butter.

Monday dinner is always leftover-based.  We had Kedgeree, home-canned beets, and steamed Tuscan kale.


Instead of de-stemming the kale, I just trimmed a couple inches off the base and chopped up the rest.  Very good.


I was watching Downton Abbey on Masterpiece and one of the few dishes they mentioned was Kedgeree.  So it was supposedly served in fancy estate houses in 1913.
