Chai Spice Scones

I am visiting relatives, and for lunch I made Black Bean Sandwiches.  I opened up a can of black beans, drained them and mashed them.  I added a little chopped carrot and celery and finished with garlic salt and chili powder to taste.  Spread on 100% whole wheat bread with lettuce and tomato and a little veggie mayo if desired.

For dinner I made whole wheat penne pasta with Marinara and Whole Wheat Rolls.  Others added salad and cooked broccoli.

For dessert I made Simply Organic Chai Spice Scones.  I noticed the non-vegan directions called for butter and the vegan ones did not, so I did blend in 2 T margarine before continuing with the rest of the vegan instructions.  They were very easy and everybody liked them.  Made seven small scones, which was perfect.

  1. Mashed black beans, mixed with spices and some rice milk, makes a great fast gravy. No need for special mixes or complicated recipes!
