Great Escape Lodge, Day 3

Last day in this vegan-desert hotel.  Same DIY breakfast as yesterday, and then after a swim we checked out.  All my research and our consequent plan to eat lunch in Glen’s Falls was hit in the face with an icy snowball.  Had to schlep our suitcases through 6″ of snow and clear off the car, and facing a drive across the state in a snowstorm, we decided to just hit Panera again and get right on the highway.  Having the one vegan item at Panera for a second day in a row is not quite so much fun.  My salad was also not fresh.

Dinner was at home sweet home: whole wheat bowties and chiccole with Pesto Marinara and Cashew Parmesan and Refrigerator Soup made with stuff that keeps very well while away for a week: garlic, carrots, Yukon gold potato, frozen collards, parsley, dill, and navy beans, and barley.  Bottle of Dr. Konstantin Reisling.

When I made Pound Cake a few weeks ago, my daughter asked at dinner when we’d be having the “smash pie.”  It took us a minute to decode that.  So tonight I said I’d thawed out the leftover pound cake and we could have it topped with the leftover sprinkly-coconutty-mini-chocolate-chipped glop leftover from Chocolate Coated Pretzels.   My daughter didn’t know what pound cake was until my husband translated: “smash pie.”  Oh, yay!”
