Cow Peas & Collard Greens

For lunch I used half a batch of leftover Pizza dough to make a personal pizza.  It had portobello mushrooms, olives, more yellow peppers I found in the depths of my freezer, frozen Hungarian wax peppers, fresh basil, and plain Wildwood Super Firm Tofu.  It was my first time trying this tofu and I really like it.  I don’t plan to get it all the time, but it’s nice for a treat.  On this pizza it didn’t add any flavor, of course, but was unobtrusive mixed in the the mushrooms and added nutrition to the meal.

Corn Cake and Cow Peas & Collard Greens

Dinner was Corn Cake with Cow Peas and Collard Greens topped with Chipotle Tabasco (Cow Peas).
