Chickpea Cutlets

Baked Chickpea Cutlets

Mashed Potatoes

My parents came for dinner and we had Chickpea Cutlets with Mashed Potatoes and Hain’s Instant Gravy.

Swiss Chard

We also had steamed Swiss chard and King Cabbage.


For dessert my son made Snickerdoodles from Vegan Cookies Invade Your Cookie Jar by Moskowitz and Romero.  We agreed they tasted like frosting.  They were OK, but pretty rich.  My son did put both pans in at once, so I suspect they were underdone.  They probably would have been better baked longer.  He will probably try them again.
