Pasta Verdura

My parents came for dinner.  I didn’t start thinking about this until an hour before they came, so I needed something fast.  I made Pasta Verdura with whole wheat fusili, garlic, roasted red pepper, crimini mushrooms, whole black olives, dried tomatoes (soaked and minced), edamame, minced jalapeno, oregano, and the liquid was the dried tomato soak water plus some red wine.  Salt and pepper to taste and top with Cashew Parmesan.  It was delicious.

We also had Whole Wheat Rolls and steamed Swiss chard.

Dessert was Carrot Cake.
