Garden Salad

Our Independence Day cookout included French Potato Salad, Grilled Collards, a salad like this one, Sage-marinaded Grilled Tofu, and Tofurky Kielbasas on whole wheat rolls.

The tofu came out very good this time.  I used extra-firm, dipped it in the marinade before microwaving it (less time than usual due to its being extra firm and my not wanting it too tough after BBQing), then put it back in the marinade for a few hours.  A half recipe of the marinade was good for one package of tofu (making eight pieces).  I grilled it a few minutes on each side, just enough to heat it up and get some grill marks.

Dessert was watermelon.  I buy seeded because I think it tastes better.  I’m not sure seedless watermelon is worth eating.  Unfortunately, nowadays most watemelon is seedless, so I usually don’t have much choice and have to buy a huge melon, so we’ve been having it every night.  I’m lucky they still sell it at all.
