Chickpea Cutlets

001My parents came for dinner and we had Chickpea Cutlets with gravy leftover from a Trader Joe’s vegan “roast turkey,” salad with Faux Feta, Southwestern Black Beans, Swiss Chard, and non-GMO corn.

The Trader Joe roast was great, too.  We had it for Christmas.  It was comparable with Tofurkey, in my opinion.  And it came with gravy, which the smallest package of Tofurkey did not, an unpleasant surprise on Thanksgiving Day.  This gravy recipe came to the rescue of the whole Thanksgiving meal, as no one had remembered even non-vegan gravy.  I was afraid it would not stand up to non-vegan scrutiny, but it was delicious and everyone liked it.
