Braided Sweet Potato Bread

Braided Sweet Potato Bread

This is from Vegetarian Celebrations, by Atlas.  I have made this many times and it always impresses.  Makes two loaves.  For detailed directions, see my Beginning Bread.

  • 1/4 c warm water
  • 1 T yeast
  • 1/4 c canola oil
  • 1 t thyme
  • 1-1/2 c cooked, mashed sweet potato (this takes about 3 c raw cubes)
  • 3 T agave nectar or sugar
  • 1 c soymilk
  • 3 c whole wheat flour
  • 1 c white flour
  • 1/2 c cornmeal
  • 1-1/2 t salt
  • soymilk to brush tops of loaves

Mix and then knead everything but the last ingredient.  Let rise 1-1/2 hours.  Divide the dough into 6 equal pieces and briefly knead – just to sort of heal the tear, but without getting the dough so tight you can’t work it.  Roll each piece into a 1″ diameter long roll.  Lay three on a baking sheet and braid them, pressing the ends together to seal.  Repeat with the other three.  Both loaves should fit on one large baking sheet.  Let rise 1 hour.  Brush with soymilk and Bake at 350 for 40-50 min.
