Cornish Brown Bread

Cornish Brown Rolls

This is from Breads by the California Culinary Academy.  This was supposed to be loaves, but I like making rolls – faster to make and more versatile leftovers.  For directions, see my Beginning Breads.

  • 2-1/4 c warm water
  • 1 T yeast
  • 2 T oil
  • 1/4 c dark molasses
  • 1-1/2 t salt
  • 2-1/2 c whole wheat flour
  • about 4 c white flour
  • 1/4 c dried currants
