Easy Whole Wheat Biscuits

These are adapted from How it all Vegan by Barnard & Kramer.  I thought they were a bit salty this time, but I’ve made them before, so maybe I just screwed up.  Makes 6.

Mix in a measuring cup and set aside:

  • 1 t vinegar (any except balsamic)
  • 3/4 c soy milk

Mix in a large bowl:

  • 1 c whole wheat flour
  • 1 c white flour
  • 1 T baking powder
  • 1 t salt

Blend in with a pastry blender (or fork):

  • 1/4 c margarine

Add prepared soymilk, and a little more soymilk if necessary to make a stiff dough.  Knead just enough to get the dry incorporated.  Either break into six parts and put in oiled muffin pan, or roll out and use a biscuit cutter.

Bake at 450 12-18 min.
