King Arthur’s Wheat Bread

This makes nice light rolls which everyone liked.  I haven’t used this recipe lately and can’t remember how well loaves come out.  For detailed directions, see my Beginning Bread.

Mix together and optionally let sit a few minutes:

  • 2 c warm water
  • 1 T each yeast, sugar, and salt

Add and knead:

  • 2 c whole wheat flour **NOTE: lately I’ve been making rolls using 3 c ww and 2-1/2 c white with very good results
  • 3-1/2 c white flour

Let rise once in the bowl covered by a towel, then form and let rise again.

The directions say to put the loaves in a cold oven with a pan of boiling water, and heat the oven to 400 for 35-45 minutes.

Instead of that, I baked 9 spiral rolls in a preheated 425 oven for 15 min (you should check them at 12 minutes).
