Whole Wheat Banana Bread

This is from Secrets of Fat-Free Baking by Woodruff.

  • 2 c whole wheat flour
  • 1 t baking soda
  • 1 t baking powder
  • 6 T sugar
  • 1-1/2 c mashed banana (about 3 large)
  • 1/4 c Prune Puree
  • 1 t vanilla extract

I use my Kitchen Aid mixer for this.  Combine dry ingredients including sugar and mix.  Add remaining ingredients and stir just until everything is moistened.  This is rather a dry mix, and if you’re doing it by hand, you may need to add some water.

Spread into an 8 x 4 loaf pan which has been sprayed with oil.  Bake at 350 for 45-50 min, or until a toothpick inserted comes out clean.
