100% Whole Wheat Pancakes

Whole Wheat Pancakes

This is my own recipe, and it proves pancakes don’t need eggs.

  • 3 c flour*
  • 3 T ground flax seed
  • 2 T sugar
  • 2 T baking powder
  • 2 T oil
  • 3-1/2 c water

Preheat a nonstick griddle or frypan.   I put my gas stove on about medium, and actually used some white-out to mark the best setting for pancakes.

Mix the dry ingredients with a whisk in an extra large bowl.

Whisk in the wet ingredients just until moistened.  Use 1/4 c batter per pancake.

Serves ~ 3.

* I made this for over a decade with 1 c whole wheat flour and 2 c white flour.  I would sometimes increase the whole wheat a bit and that was fine.  Lately I have been using 3 c whole wheat pastry flour – it’s terrific and makes these 100% whole wheat.
