This is slightly adapted from the “Call me Blondies” recipe in Vegan Cookies Invade Your Cookie Jar by Moskowitz & Romero.  Better than the other recipe I tried, and my family liked them, but I think they’re still a bit cakey for me.  They weren’t radically different from my Chocolate Chip Cake.

Preheat oven to 325.  Blend in a food processor:

  • 3 oz. silken tofu (like Mori-Nu)
  • 1/4 c nondairy milk
  • 1/3 c oil

Pour that into a large mixing bowl and blend in:

Sift in and stir:

  • 1-1/2 c flour
  • 1/2 t baking soda
  • 1/4 t baking powder
  • 1/2 t salt

Fold in:

Smooth into an 8 x 8 pan.  They called for it to be parchment lined, but I think that’s probably overdoing it.  An oil spray would probably have been fine.  I might try a 9 x 9 pan next time to make them thinner.

Bake 27-30 minutes until edges are just beginning to brown.  Let cool at least 30 minutes before slicing.
