Carrot Raisin Spice Chewies

This is adapted from Vegan Cookies Invade Your Cookie Jar by Moskowitz and Romero.  My son was dubious about the raisins and carrots, but soon changed his tune.  Made 30.

Preheat oven to 350.  Mix in a stand mixer or large bowl:

  • 1/3 c water
  • 1 T ground flax seeds
  • 1/2 c oil (I replaced 2 T with Prune Puree; next time I will try 4 T)
  • 1-1/3 c sugar (I thought these were too sweet; consider reducing to 1 c)
  • 1/2 t grated orange peel
  • 1-1/2 t vanilla extract

Sift in and stir to moisten:

  • 1-3/4 c flour
  • 1 t baking powder
  • 1-1/2 t cinnamon
  • 1 t ground ginger
  • 1/2 t ground nutmeg
  • 1/2 t salt

Fold in:

  • 1 c finely shredded carrots, lightly packed
  • 1/2 c shredded coconut (I used low-fat)
  • 1/2 to 1 c raisins

Drop by generous tablespoonfuls onto cookie sheets 2″ apart.

The original recipe said to bake 14-16 min but this was totally insufficient.  I ended up baking them over 20 and turned the heat up to 375 as well.  Maybe this was because I used a cookie scoop to drop them instead of the messier smearing them around from out of a regular spoon, so they were thicker?

Optionally top with Lemon Glaze when cool.  These will be best the first day, though still yummy later.
