Amaretto Ice Cream on Chcolate Chip Brownie Waffle

OMG, these are so decadent.  They were in the Brunch section so I made them for breakfast one time 🙂  I served it with raspberry syrup, and it was amazing but just too much for breakfast.  Now we top them with ice cream for dessert.  From Veganomicon by Moskowitz and Romero.  Makes 10 square Belgian waffles.

Measure these into your sifter:

  • 2 c white flour
  • 2/3 c cocoa
  • 1 T baking powder
  • 1/2 t baking soda
  • 1/2 t cinnamon
  • 1/2 t salt

Mix these in an extra large bowl:

  • 1-3/4 c soymilk
  • 1/4 c water
  • 1/2 c soy yogurt
  • 1/3 c oil
  • 2/3 c sugar
  • 1-1/2 t vanilla extract

Sift in the dry stuff, then blend with a whisk.  When it’s almost mixed, blend in:

Use 1/2 c measuring cup to ladle the batter onto your preheated waffle iron.

Do oil your waffle iron.  I find that these stick more than other waffles, but not in a crumbly, scrape-off-the rubble way.  It’s more like peeling silly putty off.

These freeze well.
