Chocolate Chocolate Chip Cake

Chocolate Chocolate Chip Cake

This recipe is from Total Health for You and Your Family The Vegetarian Way, by Messina & Messina.  This is a vegan nutrition book, with some recipes at the back.  The variations here are mine.

  • 1-1/2 c white flour
  • 3/4 c sugar
  • 1 t baking soda
  • 1/8 t salt
  • 1/3 c vegetable oil + applesauce*
  • 1 t vanilla extract (or see below)
  • 1 T cider vinegar
  • 1 c water
  • 1/2 to 1 c vegan semisweet chocolate chips, reserved (you can save some calories by using a lesser amount of mini chips)

Whisk the dry together in a medium bowl.  Add the wet and whisk to blend well.  Pour into one greased 8″ x 8″ or 9″ round pan.  Sprinkle the chocolate chips over the top.

Bake 35 minutes at 350, until a skewer inserted into the middle comes out clean.

Variations:

Amaretto Cake: Omit chocolate chips and vanilla, add 1/2 t almond extract and top with almond glaze.

Coconut Cake: Omit chocolate chips and vanilla, add 3/4 t coconut extract and 1 c unsweetened shredded coconut, mixed in.  Top with coconut glaze.

Maple Cake: Omit chocolate chips and vanilla, add 1/2 t maple extract, top with maple glaze.

Chocolate Chocolate Chip Cake: Add 3 T cocoa and 1/4 c sugar.

Mint Chocolate Chocolate Chip Cake: Same as Chocolate above plus add 1/4 t peppermint extract.

Sprinkle Cake: Omit chocolate chips, mix in 1/4 c rainbow sprinkles.

If you use chocolate chips, no glaze or frosting is needed.

* applesauce/oil: you decide the proportions – I have used half and half and it tastes no different.  I replaced 2 T oil with 2 T prune puree in the chocolate variation once, and it was delicious – no prune flavor.
