Coconut Chocolate Candy

This is adapted from Elizabeth’s Kind Cafe.  They are very “dark,” which is good because it’s harder to eat too many.

Microwave about 30 seconds in a large mixing bowl, or until softened:

  • 1/4 c coconut oil, melted

Add and combine thoroughly:

  • 1-1/2 c organic shredded coconut
  • 1 c cocoa powder
  • 1/2  c agave or maple syrup
  • 1 t vanilla extract

Form balls on a cookie sheet (a 1 T cookie dough scoop worked great) and refrigerate 30 minutes.  I preferred them frozen.
