Happy Vegan Chocolate Chip Cookies

This is from Denise at vegweb.com.  I made them as bars following directions from one of the commenters.  They were pretty good but it needs a little tinkering as a bar recipe, anyway.  See the comments at the link if you’re going to try cookies.  I tried the optional cinnamon, 1/2 t, and my husband didn’t like that.  We all agreed with the comments that it was too greasy, so cut the oil, maybe replace with yogurt or applesauce.  And it did need a tablespoon more liquid.

Preheat oven to 350.  Mix in a medium bowl:

  • 2 c flour
  • 2 t baking powder
  • 1/2 t salt

In an electric mixer bowl mix:

  • 1 c sugar
  • 1/2 c oil or margarine (cut this, maybe replace half with soy yogurt or applesauce)

Add and mix:

  • 1 t vanilla extract
  • 1/4 c water, plus probably 1 T more

Add dry ingredients  and:

Mix but don’t overdo it.

Here are cookie directions I didn’t use: Spoon onto 2 ungreased cookie sheets.  Bake 5 min then switch pans and rotate 180 degrees.  Bake 4 min.  (Comments all said not to bake more than 8 min in all, possibly 6 min for soft cookies, and recipe poster thought maybe her oven runs cooler).  Cookies are done when they’re pale and softer than you want – they definitely firm up.  (Comments all said it was a huge leap of faith to take them out so early but they were glad they did).  Let sit 2 min before moving to cooling racks.  Cookies will be softer if they cool directly on the countertop.

Here’s what I did: spread into ungreased 8 x 8 aluminum pan.  Bake 20 min.  We agreed these needed more cooking – see the lower left part in the picture to the left?  I thought maybe a 9 x 9 pan would be better but everybody liked the thickness as is.
