Lava Cake

How it All Vegan (Barnard & Kramer) calls this a “Chocolate Upside Down Pudding Cake,” but I was looking for Lava Cake, so that’s what I call it.

Preheat oven to 350.  Boil 2 c water.  Blend:

Add and blend:

  • 1/2 c soy milk or water
  • 1 t vanilla

Add and mix together gently until “just mixed” (I start by mixing the powder on top a bit first):

  • 1 c flour
  • 1 T baking powder
  • 1/4 c cocoa powder
  • 1/4 t salt

Spread this into a large loaf pan.  Mix up:

  • 3/4 c sugar
  • 1/4 c cocoa

Sprinkle this evenly over the cake batter.  Carefully pour the boiling water over this.  DO NOT MIX.  Put it in the oven and bake for 40 minutes.

Serve warm, in small bowls.  Goes well with vegan vanilla ice cream or soy whipped cream.
