Pudding

This serves 4.

Mix in a medium saucepan:

  • 1/3 c flour
  • 1/4 c sugar
  • 1/2 t salt

Add and whisk:

  • 2 c veggie milk
    I use Blue Diamond Almond Breeze unsweetened, but soymilk would probably be fine.  Maybe cut the sugar a little if you use sweetened.

Put on medium heat.  Cook until it boils, stirring occasionally.  Take off heat and add:

Divide into individual bowls and refrigerate.

Variations, add:

  • about 3/4 t cinnamon
  • 1/2 t maple extract
  • 1-1/2 t butterscotch extract
  • 2 t hazelnut extract

These are the variations I’ve tried; I’m sure you can think of more.  Look through your spice cupboard.  Fruit?  Nuts?
