Regina’s Microwave Fudge!


Many, many thanks to my friend Regina for this easy, delicious recipe, which I veganized with no problem.  But I only make this about once every other year.  It’s just too good and too awful!  She used to layer it with different kinds of fudge like peanut or mint, but I don’t have those recipes.  I also include instructions to halve and quarter it.

  • 2 lbs. powdered sugar!
  • 1 c cocoa
  • 1/2 c soy milk
  • 1 c non-dairy butter/margarine

Microwave everything in an extra- large bowl for 3 minutes.  (No need to pre-mix)

Beat with an electric mixer 1 minute.

Microwave 3 minutes.


  • 1 t vanilla extract

Beat with an electric mixer 1 minute.  Pour into greased 9 x 12 or 12 x 12 pan.  Allow to set (4 hours room temperature or use freezer).

NOTE: One time making a half batch I was unsure whether it would set, so I used the ice-water technique to see if it was cooked enough.  Put some ice and water in a bowl, dip up a little fudge in a spoon, rest it underwater for about 10 seconds, and then taste it.  This is about the consistency it will be when set.  You can give it another 2-3 minutes in the microwave (and another minute on the mixer), optionally adding another does of vanilla (which boils off I guess), but be sure to watch for boil-0ver.


To cut in half, microwave 2 min each time in large bowl.  Last time make sure it boils up.  Use 8 x 8 pan.

One time I cut it in quarter, and I microwaved it one minute each time, but just realized I did three cycles instead of two.  If it is bubbling up to the top of the bowl at the end, you will probably be fine.  It was pretty thin in an 8 x 8 pan.

This is the recipe I make into the World’s Smallest Batch of Fudge when I have the munchies: 1/4 c powdered sugar, 1 t cocoa, 1 t margarine, 1 t milk.  Microwave 30 seconds for two cycles, just stirring with a spoon a bit in between.  Use a drop of vanilla at the end.  It only makes a tablespoon or two, perfect.

    Thanks so much for this! I am eager to try it, but I don’t have a microwave. Would heating it in the oven be okay? And for how long?

      No, I don’t think fudge would work in an oven. Traditionally it is made on a stovetop. There are probably a million recipes for that online. If the recipe calls for a candy thermometer then that is a must. Have fun.
