Sugar Cookies

 

This is from Colleen Patrick-Goudreau’s The Joy of Vegan Baking.  Made 30 of these cookies.

In a tall bowl (either of stand mixer or with your electric hand mixer), beat 3-4 minutes:

Add and beat 1 min:

Add and beat to form smooth dough:

  • 1-3/4 c unbleached flour
  • 1/2 t baking powder

Divide dough in half, wrap both in wax paper and refrigerate about 1 hour.  Too long and the dough will be too stiff.

Preheat oven to 350.  Remove and roll out the first portion to 1/4″ thickness.  Cut with cookie cutters and place on greased or parchmented cookie sheets (my seasoned sheets did not need preparing).  Repeat with second portion of dough.

Bake cookies 10-15 min, until they just begin to brown around the edges.  Don’t worry if they are pale on top.  Let cool on baking sheet a few minutes and then remove to wire racks.

1/3 of a recipe of Vanilla Frosting, applied with pastry bags, will give the frosting density you see in the photo.  You’ll need more if you want to spread it on.
