Vanilla Cake with Vanilla Frosting

Vanilla Cake with Vanilla Frosting

This is from How it All Vegan, by Kramer and Barnard.

Cream that until light and fluffy.  That means high speed for several minutes.  Add:

Variations:

  • Peppermint: 1/4 t each vanilla and peppermint extracts + red food coloring
  • Maple: 1/2 t maple extract, no vanilla or soymilk

How much to make:

  • 1 recipe frosts a two layer cake.
  • 1-1/2 recipe frosted a 9″ 3-layer cake.
  • 1 recipe frosted just the tops of an 8″ 3-layer cake.
  • 1/3 recipe is plenty for 12 cupcakes.
