Arrabiata Sauce

This spicy tomato sauce is from 150 Vegan Favorites by Jay Solomon.

Saute the following over med heat in a large saucepan for 9 min:

  • 1 T olive oil
  • up to 12 oz. white mushrooms, sliced (I used just a few, chopped)
  • 1 green bell pepper, in slivers (I used 1 c frozen diced)
  • 3 cloves garlic, minced

Add, reduce heat to med-low, and cook 20 min:

  • 1 28-oz can crushed tomatoes
  • 2-3 pickled pepperoncini, seeded and minced (I used about 1/3 c frozen banana pepper rings with seeds
  • 2 t oregano
  • 1 t dried basil
  • 3/4 t dried red pepper flakes, or more to taste
  • 3/4 t salt, or more to taste

This originally called for 1/2 t each red pepper and salt, and it tasted disappointingly sweet and not spicy.  I foud that adding more salt and red pepper helped.
