Big Daddy’s Carolina Style BBQ Sauce

This is adapted from an internet recipe.  One reviewer said they thought it was too sweet, so I took their advice and held back some sugar, as indicated below, and I was glad I did.  It was really good over Hoppin’ John and collard greens.

Simmer in a small pot 30 min:

  • 1/2 c prepared yellow mustard (I used spicy brown)
  • 1/4 c + 2 T cider vinegar
  • 2 T water
  • 2 T sugar
  • 1 T chili powder
  • 1 t ground black pepper
  • 1/8 t cayenne

Add and simmer 10 min:

  • 1/4 t soy sauce
  • 1 T margarine
  • 1-1/2 t liquid smoke (I just realized I only put in 1/2 t)
