Chipotle Adobo Sauce

This is adapted from Veganomicon by Moskowitz and Romero. Serves 4.  Find the adobo peppers in a small can in the Goya section of your market, though I found a brand without HFCS.

Saute in a small frypan on medium 10 minutes or until beginning to brown:

  • 3 T olive oil
  • 1 large onion, diced small

Turn heat down, add and saute a minute:

  • 4 cloves garlic, minced
  • 2 chipotle peppers in adobo, minced
  • 2 T adobo sauce from the chipotles (I had trouble getting this much sauce out of the can)

Remove from heat and serve as a condiment.
